Since I have been married I have learned that I like (not love) to cook, as long as it doesn't take for ever. For example making Lasagna takes forever, at least the way I was taught to make it. I already told Matt not to expect me to ever make lasagna, unless it comes from a frozen package. I want to be better about having a variety of dinners, and I thought I would ask all of you who happen to be reading this what quick dinner recipes you like.

Lasagna does take a long time, but this is how I make it worth my while and make another couple of quick meals: just make extra of everything and buy a couple of square aluminum baking pans. As you are making the one for dinner, make 2 more in the pans and stick them in the freezer. Then in a while when you are trying to decide what to have for dinner, just grab a lasaga-whala out of the freezer. The most work you have to do is watch that baby thaw all day! ~Jess
We also really like to throw 2 chicken breasts in the crockpot with 1 or 2 cans (depending on how juicy you like it) of Rotel-found by the canned tomatoes at the store. When you are ready to eat, shred the chicken, warm up some tortillas, shred some cheese and bring on the sour cream and you've got yourself shredded chicken tacos! YUM! ~J
Oooooooo! Have I got some recipes for you. I'll be posting them on our Christensen Family food blog, so check back every now and then. But a couple of easy meals we've had lately.
Pita Pizzas: just throw your pizza toppings on a pita, and bake until you like how it looks. Serve w/ salad & lemondae. Bon apetit.
Chicken Pockets: visit my blog, then go to the "Cooking with Hilary" link. Scroll down to Chicken Pockets. We've had it twice in the last 10 days, and have frozen some, too.
Pitas w/ egg salad. Stuff w/ lettuce, tomato, red onion, etc. Serve w/ oven fries. So easy, so healthy, and so yummy. Details to come on blog.
I love cheesy stuffed pastas, but lasagna can be a beast. So sometimes I'll just cook up some random noodles (sprial or mini shells). Throw in a baking dish with random things like: spinach, cottage cheese, corn, tomatoes, zuccini...whatever I have and am in the mood for. Even chicken or gr. beef if you want. Throw lots of pasta sauce. Mix it all together or layer it. Top w/ extra cheese (parmesean, too!). Then bake it so it's warmed through. Mmm. Easy and a nice alternative.
Whoa, sorry for the lengthy comment. I've been really into this topic lately.
One of the easiest recipe I know is buy a pound of stew meat and put in crock-pot with a can of green chili. Add a little bit of water, enough to cover meat. Cook on high for 4-6 hours. Shred beef and have green chili burros. Or buy a pound or two of pork chops (with or without the bone). Place in crock-pot with a bag of baby carrots, and a 8oz jar of apricot jam and cook on low 7-8 hrs. That is it. I love the crock-pot recipes. I just throw it all in and leave it.
I'm a little behind on your blog. I loved your long post a few ones back. It's so interesting how life experiences shape and change you. I also loved the picture of Blake in his swimsuit. Also, it's weird, but I think that Tate and Blake have the exact same wardrobe. I'll think of some quick recipes...
I love recipes! I think I might borrow your idea and post a recipe request on my blog - then we'll get twice as many recipes! One of my fave sites is http://www.kraftfoods.com/kf You can find some awesome, usually easy dinner recipes. They use tricks like using salad dressings (italian, asian, etc) for seasonings to cut down on your ingredient list. One of Zac's favorites is the Beef Noodle Bowl. It's pretty healthy, too.
Curry. A package plus chicken and maybe rice takes 10 minutes, providing you like it.
Anything Mexican is quick and excellent.
Athenian Grill across the street. I haven't been there, but due to its greek-foodedness I give it 4 stars.
I hereby declare that I'm Colin, not Bethany.
